My wife and I went to Aix during a week long stay in Provence and we both really like Aix. The best raspberry tart I've ever tasted was bought in a patisserie there. There's also great cafes restaurants and galleries (Van Gogh painted a good deal here some while he was in an asylum in nearby St. Remy. Cezanne also captured the beauty of Provence in many of his paintings. A good book to read if you're considering the area is 'A Year in Provence' by Peter Mayle. It's a great vacation read as its light (many funny scenes) and informative as to the fantastic food of the region. We stayed in a French farmhouse called a 'gite' (pronounced zheet) which is a great economical way to visit France. They are rated (and subsidized) by the government and allow you to experience France like the locals. I highly recommend them as its a wonderful system and help preserve the heritage of the farmers in France.
