Went to Bangkok in December and were fortunate to be able to get a flight to Chang Mai for two days. We got a private guide to take us around, and skipped the formal itinerary and asked to have her show us what ever she could within the time period we had. It cost a bit more, but we saw everything and didn't waste any time. You should visit the elephant camp and take an elephant ride into the jungle, the short one is good enough. If you have time, take a raft ride down the river and have lunch along the way. Visit a local tribe, and see if you can see a tribe that is a bit off the beaten path, as that is a better experience. Don't revert to bargaining as these people are so poor. Once you are home you will wish you spent way more money with the tribes, and didn't try to get the best deal. You would pay more for a starbucks at home than buying a trinket from a tribe that you will value forever. Also, your change is a fortune to them, just give away your pennies. It is worth it. AND DON'T FORGET TO HAVE A THAI MASSAGE - OR SEVERAL.
