The Chinese used to devour hotpot as a nourishing winter dish. Nowadays they enjoy hotpot every season. Tables come complete with burners, and diners choose their ingredients, plunge them into the boiling stock, and enjoy them with a variety of dipping sauces. The distinctive hotpots created by Fan Zhongzhi, general manager of the restaurant, includes sour green soup, spicy red soup, yellow curried soup, milky soup and soy soup. Diners can choose from more than 100 types of meatballs. Newer versions include peanuts, pine nuts, cashew nuts, water chestnuts and Chinese wolfberry fruit. Diners can also dip buckwheat and mung bean noodles and dumplings.
