Chances are, if you're a tonkatsu (breaded pork cutlet) fan, you've probably had a bad one somewhere along the way. It's an easy dish to overcook; once the meat has toughened up, there's no saving it. Fortunately, there's little chance of that happening at Fritz. Chef Genshiro Saito cooks his tonkatsu slowly, at low temperatures, providing the perfect contrast of tender juicy meat and crisp panko coating. And, thanks to the wonders of Japanese frying alchemy, it is never overly greasy either. It'll be hard to go back to ordinary tonkatsu after you've tried the Fritz version. Other Western-style dishes are also available.
