The spotless and orderly kitchen shelves display an attractive array of basic but crucial ingredients and spices. The succulent spring rolls are derived from a North Vietnamese recipe. Difficult to find in Japan is the spring roll which is wrapped in special rice paper called banh trang re. Other dishes that should not be overlooked are the noodles and beef stew.
