Ayam Penyet Ria, Singapore

Humble Indonesian food has taken off in a big way in Singapore, and Ayam Penyet Ria is the best of the best with new branches popping up across the island. The signature dish is the "ayam penyet" (crispy fried chicken smashed with a hammer so the meat is easy to eat) served with spicy sambal chili sauce on the side, but other highlights include gado-gado salad (veggies in peanut sauce), beef soup, and grilled fish.  The original branch in Lucky Plaza is still the best, but should be avoided on Sundays when nearly all of Singapore's Indonesian community shows up for lunch – a sure sign of its authenticity.  There are other locations including Jurong Point and Tampines Mall.
