While many of Sydney’s top chefs are falling over themselves to out-fancy each other in the food stakes, it’s refreshing to see that at least one of them is attempting to return to his roots. Dietmar Sawyere, previously of inner-city Forty One and the perennial favorite Berowra Waters Inn, has set his sights on neighbourhood dining with Pymble’s Ad Lib Bistro. That’s not to say that it’s cheap, but the fussiness is gone, resulting in a classic French bistro dining experience. Expect well-prepared favorites like duck liver parfait with onion marmalade, fish fillet meuniere and classic chocolate mousse.
