Sir Joseph Banks Hotel Bistro does not just take its name from Captain Cook's on-board botanist, its cuisine takes a leaf out of his botany book too. The decor is rustic Australian heavy timber. There is also a big bar area. Banks Bistro inside Sir Joseph Banks Hotel, is as Aussie as it gets. Not to be confused with Mod Oz, which generally refers to a fusion of cuisines, this is a real taste of Australia kangaroo, home-grown coffee and home-made bush bikes. Wash it down with superb Aussie wines and, of course, the best in Aussie beers.
