Sixpenny, Sydney

While there's nothing rare about high-end dining in Sydney, for the most part it tends to be found on the fringe of the city. But with the opening of Sixpenny in Stanmore, fine food moves ever west. It's the new project from the chefs that once manned the kitchen at Oscillate Wildly, and you'll find their signature degustation-only menu here too. There's an emphasis on locally grown produce, which makes its way to the table quite intact, with dishes like garden beans with soft cheese, snapper with soft leeks or hanger steak with smoky cabbage and mustard leaves. -Kashmir Brummel
