Fusion food is still a relatively new concept in Rio de Janeiro, and this newcomer to Leblon's sophisticated dining scene is a good pioneer for the concept. Blending Japanese dishes with local ingredients and flavors, Chef Cesar Baltazar has created an innovative menu that makes good use of the wealth of fresh seafood, fruit and vegetables that this tropical coastal city puts at his disposal. Grilled fish in a semi-sweet red wine reduction with white asparagus, cherry tomatoes and crunchy squid is a good option for adventurous diners, while those with more traditional tastes might want to try the salmon sushi with ginger, passion fruit and a caramelized crust.
