La Ferme (The Farm) may be Marseille's best restaurant; in any case, chef Raymond Borso has quite a reputation locally. Borso is a master of innovative marriages like bass with crab, squash tourte with foie gras, Blanquette of Salmon, scrambled eggs with sea urchin, Eggplant Mille Feuilles, and Braised Stuffed Cabbage. The dessert cart is not to be missed.
