Axuria occupies the old location of Le Chaumiere, where chef Olivier Amestoy has renovated the restaurant inside and out to create a bastion of Basque cuisine. Fresh seasonal ingredients form the base for most all of Amestoy's creations, the prix-fixe menu changing regularly and showcasing some of the hidden traditional flavors of the Pyrenean region. Suckling lamb roasted with garlic and salt is served with thyme flower and sauteed potatoes, lending a mountainous feel to an artfully plated dish. Decadent French dishes such as potato and foie gras gratin and a Grand Marnier soufflé show a different side to Amestoy's cooking, proving that his mastery of haute cuisine technique is very much on point.
