Firmin le Barbier, Paris

This isn't the beginning of a bad joke, but a new restaurant that has opened in the chic 7th arrondissement near the Eiffel Tower. Firmin, a former surgeon and grandfatherly figure, runs the tiny restaurant with a huge wine selection and open kitchen so that patrons can see what they are being offered. Firmin writes the choices for the day on a chalkboard and brings them around to your table himself. He's glad to help you as you deliberate the delicious options and will assist in selecting the perfect wine to accompany your meal. It's obvious that he opened a restaurant intending to welcome and interact with the patrons, so don't be put off by his chattiness.
