In his singsong accent, Mario (the restaurant's Roman owner) announces the culinary delights featuring on the menu. He's also quick to point out that he uses real saffron, gathered from flower pistils, and not its powdered substitute (a pale imitation of the real thing often used as a coloring) to give his rizotto zaferano (saffron risotto) its rich flavor and color. You won't find anything but the real McCoy here and the restaurant's regulars know they're on to a good thing.
