Le Versance is run by two young French chefs Georges Blanc and Samuel Cavagnis. Located inside a restored building, this is a nice place for a cool drink and dinner in a quiet and elegant atmosphere. The chef likes to use a lot of spices and herbs like dill and pink peppercorns to flavor his salmon rillettes spooned into large pasta shells and even the dessert like the île flottante, a meringue in licorice-spiked custard sauce. The food is heavenly and made from the freshest ingredients. It is a nice place for a business meal and you can enjoy your conversation here while smoking your favorite cigar from its well-stocked fumoir. After dinner you can have coffee, rare teas or digestifs.
