Chef Úlfar's name is famous in the Icelandic foodscape. Úlfar's effect on Icelandic seafood cuisine has been considerable, and has in turn influenced and inspired the rapid increase in the country's culinary delights. This has meant a shift from the idea of traditional Icelandic food' and Icelandic specialities as a Viking banquet, low on spice and heavy on simplicity, to more adventurous and imaginative creations, making the most of the fine Icelandic seafood, organic lamb, whale, game and wild fowl.
