Pizzaman, Florence

The first pizzeria of this Florentine chain opened in 2001. The owner Pasquale Pometto considers himself “pazzo per la pizza” (crazy for pizza). At Pizzaman, they prepare the true tick Neapolitan pizza. The Margherita, Marinara, and a few more are all prepared with freshest buffalo or fior di latte (made with cow’s milk) mozzarella cheese, sanmarzano tomatoes, fresh basil, and oregano. As an alternative, they offer the Panuozzo filled with rocket, mozzarella nuggets, smoked scamorza cheese, and cherry tomatoes. Everything is strictly cooked in a wood-burning oven. In some of the branches of the chain, gluten-free pizza is also available. - Maria Frullini
