Specialties and flavors peculiar to Pugliese cooking include Lampascioni con la cicoria (vegetables) and fave a purè, Sformato di riso alla barese, chickpeas and fried pasta, Tagliolini neri (pasta with black sauce) or gnocchi and zucchini.
