The Nicolás restaurant has been in business for 60 years and is up there with the best of the classics. In the sixties it had one of its best times and then went through a bad period for a while. What goes around comes around, though, and in the last few years it has recaptured its prestige, thanks to its dedication to high quality. The entrance to this classic, rustic restaurant, which is situated in an old house in one of Bilbao's most central areas, is through a small but elegant bar. Traditional cooking with new and original touches is predominant. The specialties of the house are salads and fish. Some recommendations include: seasonal salad, Nicolás hake, charcoal-grilled paté with apple puree, and mussels mariné. The house wines are excellent, and if we have to choose one, then Marqués de Navarrete, Gran Reserva 85 is a good bet.
