Casa Parrondo, Madrid

Casa Parrondo is at the top of the list when it comes to places that truly represent Asturias, the autonomous region in the north of Spain that is known for its endless green fields and farms, delicious meats and cheeses, and strong alcoholic cider. The wooden ceiling is covered with various hanging foodstuffs and ironwork; the walls boast antique shields and strange rural devices. The food itself, however, is worth the trip alone: try any one of the savory meat dishes and a serving of Cabrales —a strong, spicy cheese—over bread or potatoes. A glass of cider from the tap really brings out the potency of the flavors here, as well as the cheeriness of the veteran waiters. - Michelle Campagna
