Copla, Madrid

This tavern is more antique-Spanish than most: its walls are covered with pictures of famous copla singers from the past half-century, while the metal-and-wood bar is typical of Madrileño hangouts from the 1890s. Giant vases, which were once used to store olives, oil and wine, are scattered throughout the main room. The menu of this charming locale includes such tasty specialties as pickles stuffed with anchovies, chicken consommé, and flamenquines—a meaty kind of shish kebab from Córdoba. Wine is the drink of choice here, and when ordered, the staff offers either "young" or "aged" (joven o crianza) for the reds and whites on the list. - Michelle Campagna
