Tomates Verdes Fritos, Madrid

This adorable, tavern-style tapas bar has got the culinary traditions of every region in Spain covered on the menu, from codfish fritters and salmorejo (the latter is a thick tomato soup typical of Cordoba) to bull's tail and Sunday servings of cocido madrileño, a hearty stew typical of Madrid. And that's not all: they've also got fried green tomatoes—just as their name advertises—cooked à la New Orleans-style, and Swiss Raclette, a dish with melted cheese and roasted potatoes.
