The bar is named after its former owner, a popular local who, allegedly, used to have the "gilda monopoly." A gilda is a cold pintxo (Basque tapa) made of red chili peppers, anchovies and olives. From inside the bar one can see the Plaza de la Constitución framed by the ever-open doors, cured hams hanging from the ceiling and a floor completely covered in sawdust. This peculiar setting is at the same time traditional and very charming. The menu includes some of the best Spanish cured hams, excellent hot and cold pintxos, cheese tables and delicious casseroles. And gildas, of course!
