An eclectic menu of Pacific Rim and Caribbean cuisine balances the heat of chilies and spices with cooling fruit sauces and vinaigrettes. Examples include, Thai Chili-Rubbed Pork Ribs with caramelized garlic and yellow fin potato mash over pickled cabbage slaw, Seared Muscovy Duck Breast with Thai curry cream, toasted coconut, sweet potato whipped polenta and Asian scented vegetables.
