Try the Live Scallop, a dish that is not only fresh as can be but is also served two different ways: nigiri-style drizzled in ponzu sauce and tempura battered with onions. Chef Jackson Yu, who has worked at Ebisu, ensures that the other dishes are also as fresh as they can be by having fresh fish brought in daily to avoid freezing.
