One of the restaurants at the beautiful Cheyenne Mountain Resort, the Mountain View Restaurant really does live up to its name. The outdoor terrace is the eatery's main drawing card, affording breathtaking views of the mountains. Although the views are the main talking point, the food, too is worthy of mention. From their post at the open-air kitchen, the chefs whip up some truly delicious creations for breakfast, lunch, dinner and Sunday brunch. The restaurant offers 'Colorado Fusion' cuisine, crafted from fresh, local produce and incorporating cooking styles from the world over. Your fusion meal starts with offerings like buffalo carpaccio, mussels and chorizo and lemon asparagus bisque, among many others. You can then move on to mains like Thai BBQ rack of Colorado lamb, huitlacoche salmon and queso fresco stuffed chicken. You can also pick something from the wine selection to complement your meal.
