It's fun to watch the chefs work their magic in the open kitchen at the Vesta Dipping Grill in LoDo. The décor of the historic former spice warehouse is industrial chic, with sculptural references to the six Vestal virgins of the ancient Roman religion and Vesta, Goddess of the Hearth. Chef (and Denver native) Matt Selby is known for his creativity and the small, trendy establishment showcases his talents. Diners choose from a large menu of grilled dishes—flat iron steak, tenderloin, chili-seared tuna, lamb, coconut-masala tofu—accented by a palette of unusual dipping sauces, such as coriander lemon preserve. Your taste buds are in for a treat.

  I ate at Vesta in October 2010. Overall, it was a great experience and I would highly recommend it to others. First, the location is in a great area of Denver known as LoDo. It's near the ballpark and many other restaurants and bars. Second, it's a great space with very interesting decor. They've successfully created an open and comfortable feel but still added some trendiness while maintaining a western Colorado flare. Third, the menu is very interesting. The featured item is their homemade sauces which are expertly chosen to compliment their well-prepared entrees. The highlight for me was their gluten-free and Celiac options. They actually have separate menus for each - the only time I've seen that. As someone who always eats gluten-free, eating out can be stressful. But our waitress was very knowledgeable and careful with my order. The food was all very good. They also had an impressive wine and cocktail list.
