Seven brothers from Guadalajara, Mexico opened the Guadalajara Grill here, and one in Taos several years ago, to local acclaim. The decor is utilitarian with a cool purple neon light thrown in for atmosphere. Standard fare like tacos and burritos are offered with a variety of fillings. Dinner offerings include cow tongue, or Barbacoa Lengua and cow cheek, or Cachete.
