Greg Koury, manifested his restaurateur dream with Manuel’s, heavily inspired by his education in Latin American History. Not to be mistaken with the over-popular Tex-Mex cuisine, the menu on offer travels to the interiors of the region to feature traditional Mexican fare, now a UNESCO Intangible World Heritage Cuisine. Ancestral recipes inherited over generations, take new shape with modern cooking techniques to carry the city's rich gastronomical legacy forward. Start off with botanas like Nachos, Ceviche and Quesadillas, and tuck into specialties Calabazita Rellena, pork and guacamole stuffed zucchini and Alambres, a version of grilled shrimp, made from seasonal, organic and locally-sourced produce. Complement the same with regional tequilas, exquisite wines and signature margaritas.
